Paleo Savory Muffins (Grain, Gluten and Sugar free)

Last weekend, I made amazing savory muffins aka chicken muffins. They came out tasting great and they were so quick to whip up.

High in iron and protein, these meaty Paleo muffins are perfect for any low-carb eater looking for tons of sustainable energy. I have one for lunch and I am totally satisfied until dinner.

The muffins go really well with my favorite Gluten Free, Organic, Non-GMO Legume Pasta


People are starting to notice when they go grain-free they feel better. I hope these muffins can help you feel better and enjoy life!



Paleo Meat Muffins recipe (makes 6 Big muffins)

Ingredients:

Preheat your oven to 375 degrees.
 

Start by shredding onion and chicken.

Mix 6 Eggs with baking soda, sea salt and Coconut oil

Add coconut / tapioca flour mix.

Mixture should be on the thick side. Mine looked like hummus.

Grease a muffin tin with coconut oil.
Pour batter into muffin pan, filling each muffin almost to the top.



Bake for 25-35 minutes, until the top is golden brown and a toothpick comes out clean. 


Remove from the oven, then let cool for 15-20 minutes. 

Wrap the muffins tightly and store in the fridge for 1 week. I actually think the muffins get better as the days go on.
